Oriental Sprouted Salad Recipe

Full of zest, the Oriental Sprouted Salad is an easy to make side dish. It is refreshing, light, zingy and very healthy. The best thing about this vibrant salad—aside from its yummy taste—is that it is a good source of iron, selenium, zinc and Vitamins. The Chinese-style oriental dressing complements the fresh tangs of the ingredients.

Utensils needed: large serving bowl, medium mixing bowl, whisk, knife, cutting board

Ingredients:

– 1 carrot
– 1 celery stick
– 1 apple
– 100 g (3½ oz) mung bean sprouts
– 50 g (1¾ oz) sprouted sunflower seeds
– 45 g (1½ oz) sprouted alfalfa seeds

Ingredients of the Oriental dressing:

– 1 tablespoon lime juice
– 1 tablespoon finely chopped fresh coriander
– 2 tablespoon sunflower oil
– ½ teaspoon toasted sesame oil
– ½ teaspoon light soy sauce
– 1 teaspoon grated fresh root ginger
– Salt and pepper

    Take one large fresh carrot, wash it and wipe dry. Peel it if you want and cut it into about 4 cm (about 1½ inch) lengths. Now, hold the carrot pieces with one hand and cut them into very fine matchsticks. Place them in a large serving bowl.

    Grab 1 celery stick and cut it into matchsticks of similar sizes as those of the carrots. Put both of them in a bowl.

    Now, peel one fresh apple and gently cut it into at least eight wedges.  After that, delicately cut the apple wedges crossways in order to give them a fan-shaped look.

    Mix the apple slices with the carrot and celery pieces in the bowl.

    Add in the mung bean sprouts and sprouted seeds and toss them well. Set this bowl aside for some time or until you make the Oriental dressing.

    For the Oriental dressing, take a medium bowl and whisk together the lime juice, finely chopped fresh coriander, sunflower oil, toasted sesame oil and grated fresh root ginger.

    Season the dressing ingredients with salt and pepper to taste.

    Now, drizzle the dressing over the salad in the bowl and mix them well in order to make sure that all ingredient are coated completely and evenly smooth. Serve it immediately.
